I personally subscribe to a Paleo diet. I agree it is mainly the food that you eat that distinguishes a Paleo diet. Paleo diet keeps away from dairy, grains and legumes. Grains containing gluten are especially cautioned against. A lot have been talked about the biochemistry of the forbidden food groups and their interactions with the body but mainly, is boils down to proteins that our bodies are not able to properly digest. These proteins are said to cause damage and inflammation to the gastrointestinal tract and subsequnet systemic immune dysfunction. other justification is evolutionary basis. According to proponents of the Paleo diet, humans did not evolve eating dairy and grains. They thrived on what they could go out and hunt or forage which mainly means meats, seafood, eggs, vegetables, fruits and nuts - a Paleo diet essentially!
