That's pretty much what I do, and/or did, before I became a fat powerlifter.
I generally advocate the 10% rule for cutting...allow about 10% of your calories for whatever. This concept used to stir up some heated debates over here at times. Of course, this doesn't apply to cutting bodybuilders who need a greater degree of precision. I stay out of their world.
Bulking, dirty calories become more convoluted. Whatever your definition, I still say allow 10-20% of your calories to be from whatever, as long as your intake is reasonable relative to your goals.
Being an old fat, I've cut more than a few times. I've always left room each day for a mini-candy bar, stray pop-tart, or whatever.
